Climate

The 2020 vintage will be remembered as an historic year for our oil, in all aspects. Despite the significant drop in production of the Italian olive oil of 2020-2021, the quality of the product was outstanding. In our olive groves, the hot and dry climate during the harvest allowed the olives to progress to optimal maturity and guaranteed a product of excellent healthiness, avoiding the attack of pests. The favorable climatic conditions during the flowering period and above average temperatures during the summer months, allowed the olives achieve full development polyphenolic compounds, antioxidant substances responsible for pronounced bitter and spicy flavors which give the oil a better stability over time and enhance its health properties.

Food Pairing

Its striking flavors and aromas make it the perfect oil for all purposes, it can be used both raw, where just a few drops enhance the flavor of the food, and for cooking. Perfect on any type of soups, grilled meat and fish, salads, and vegetables with vinaigrette; delicious on slices of toasted bread and carpaccio.
