Harvest
The grapes are harvested by hand in small crates. At the beginning of September for the Grechetto, middle of September for the Procanico, Verdello, Drupeggio and Malvasia.

Vinification
The grapes are vinified separately, variety by variety. From a soft pressing we select only the must, which undergoes a fermentation with selected yeast in stainless steel tanks at a controlled temperature of 15°C. it is then blended at the end of December.

Climate

The harvest of 2014 was not an easy one, with an important drop in production compared to the previous year. The causes lie in unfavorable seasonal pattern and abundant rainfall during the summer months. This was a moment of great concern about the integrity of grapes, but it is a vintage that we will remember for sustained efforts and results achieved. Through meticulous and accurate work, rigorous selection of grapes, and thanks to the sun which finally comes back to shine in September, healthy and perfectly ripe grapes were brought to the cellar. In this year with mainly rainy and cool climate, our Orvieto Classico Superiore is a refined wine with a sensory profile leading to great finesse enriched by tertiary aromas.

Tasting notes

A bright and light yellow in color, penetrated by green highlights underlining its youth and potential. A captivating wine that entices you to taste it. On the nose, soft aromas of sage flowers, ripe decana pear, lake stones, and dried white fruit. On the palate has exceptional composure and, after swallowing, remains involved in a lengthy finish with a fresh and vibrant aftertaste. Its peak is perceptible but still far to reach. The wine is destined to evolve over time and greatly increase in complexity.

Food pairing

It is well combined with frogs and marjoram, risotto with pumpkin and sausage, ravioli with ricotta cheese and spinach served in a butter and sage sauce, stuffed rabbit, small pieces of chicken wrapped in bacon.

Climate

The climate was regular and all phenological phases (budding, flowering, fruit set, and color change) were excellent. The grapes early reached a high sugar content and harvesting activities began at the end of August with grapes of excellent healthiness and with unique organoleptic qualities. Ca’ Viti 2015 is a masculine wine that perfectly captures the very hot summer, dominated by high temperatures in July and August and very low rainfall.

Tasting notes

A compact, warm golden in color, as if illuminated by a clear morning sun. On the nose notes of dried gorse flowers and dry underwood hints accompanied by smoky accents with notes of granites and light marls. Long with a pleasant overbearing finish that lingers on the palate, pushing harmoniously downwards and upwards. The warm and mature sensation, which dominated the aromatic spectrum, is transformed into a pleasantly bitter concreteness. The freshness of the sip culminates in rich and savory flavors.

Food Pairing

Thanks to its volume it is the perfect pairing for baked fish with vegetable ratatouille, carp in porchetta, pork loin stuffed with artichokes, tagliatelle with asparagus, yellow squash and mushrooms quiche.

Climate 

The climate of the 2016 vintage was rather regular, although there were moments of great concern throughout the year. After a mild winter with poor rains to a spring with abundant rains and an early summer with temperatures below average, the climate has given us a great summer. The extreme temperature swings close to the harvest assured an excellent ripening of the grapes, giving wines with high aromatic profiles and great acidity. A vintage that, more than any other, enhances the elegance of Orvieto Classico.

Tasting Notes

An impressive bright color with the golden notes of evolution and the fresh ones of youth. Golden and green highlights alternate and dominate the glass. Slight hints of oxidation enrich and complete captivating sensations of ripe yellow and tropical fruit, dried mango, candied ginger, and avocado spread on sour bread to enjoy with a soft bloomy rind cheese and smoked salmon. On the side, notes of candied grapefruit peels, sliced ​​oranges, stretches of juniper bushes and strawberry trees enhance the delicate hints of a forest of holm oaks with dry leaves, while a light breeze drives the nose to pleasant smoky notes. Austere on entry with an outstanding personality and great elegance which arouse clear and complex sensations. Fruity and pleasant, the palate is clean on the finish with a well-balanced acidity and sapidity. This wine has a great aging potential and can improve its aromatic complexity in the next five or six years.

Food Pairing

A wine of great significance combines with important dishes. It pairs perfectly with tagliolini with summer truffle, lamb in fricassee, medium-rare pork with glazed vegetables, baked turbot with potatoes and rosemary, and veal stew with juniper and cloves.

Climate 

The climate of 2017 vintage has put a strain on the vineyard and the winemaker. Drought, spring frost and temperatures always above seasonal average, especially in July and August, affected the production in quantitative terms. The 2017 vintage was one of the driest of the last decades that we will remember for the late frost of May 24, which significantly damaged production. The rainfall was low, only 196 mm of rain throughout the year, 121 of which occur on September 1st, giving our vineyards relief from the summer heat and ensuring an excellent ripening of the grapes. Facing with a difficult year, Ca’ Viti 2017 reveals pleasant surprises, an intense, more spicy aromatic profile, with important varietal characteristics.

Tasting Notes

Yellow that turns gold, mature, warm, and elegant. On the nose, the light and delicate sensations of ripe fruit merge with clear hints of birch bark in the shade of a forest in spring, fresh aromatic herbs, marjoram, and light sands; notes of gorse flowers fallen to the ground, lush jasmine, and reminiscence of raisin. Its entry on the palate is voluminous, the structure is impactful and enriched by sweet notes of ripe fruit with light skin dried under the sun. The delicate bittersweet aftertaste fades to a flavored and mineral finish.

Food Pairing

Thanks to its distinctive amplitude it is the best pairing for broiled crustaceans with olive oil, penne with arrabbiata sauce, Tuscan ribollita soup, pappa al pomodoro, and legume soups.

Climate 

The 2018 growing season began with a mild January with little rainfall, followed by a very rainy February with rainfall levels above the average which helped in replenishing ground water reserves in the soil after the previous year drought. The beginning of March was marked by freezing air which led to a delayed bud break. Relatively hot temperatures and dry conditions persisted throughout the month of April with temperatures above seasonal average, while ample rainfall characterized the months of May and June. Summer brought average temperatures and scattered rain showers, then beautiful sunny days and excellent temperature swings from daytime heat to nighttime coolness during the month of September led to a fine ripening of the grapes. An extraordinary harvest that gave us a complex, soft, enveloping, perfectly harmonious, and balanced Ca’ Viti.

Tasting Notes

Intense in color, compact with impressive green highlights and bright golden hues. Its nose has hints of nectarines, apricots, and orange blossom in addition to lush bushes of wild rosemary and wet sage leaves. Its entry on the palate is voluminous, pleasant and austere at the same time, with notes of sliced banana lying on moist river stones, dry and fragrant seaweed, orange and grapefruit peels hinting the fantasy of juicy citrus fruits with salt and oil. Remarkable for its dynamic and wonderfully persistent finish.

Food Pairing

The strong youth of this wine pairs beautifully with risotto with porcini mushrooms but also it matches well with spit-roasted chicken and a traditional Sunday lunch in the countryside with rabbit in porchetta. 

Climate

The 2019 harvest was marked by high quality grapes but low production due to the unfavorable weather pattern. The mild temperatures and low rainfall of the winter led to an early vegetative growth of the vineyards compared to the previous year, then below average temperature and heavy rainfall slowed the process of flowering and development of the grape bunches, influencing the fruit set as well. These conditions led to the development of loosely packed clusters of grapes. The restoration of water reserves and a rise in temperature in June and July allowed a vigorous growth of the grapes. The lower temperatures in September stimulated intense aromatic characteristics and low consume of malic acid, conditions which assisted in achieving delicate and fragrant wines. 

Tasting notes

Its yellow color is reminiscent of a freshly mown wheat field under the July sun. The bouquet has light notes of lavender, elderflower, kaiser pear, and ripe yellow apple perceived at the end. With scents of wet chalk before its entry on the palate, this wine reveals its great personality through a fine and delicate elegance. Then hints of ripe white fruit, lime powder, aromatic herbs, and white pepper blend together to create a gradual, delicate, and balanced finish. 

Food pairing

This wine requires the matching with such refined dishes as raw cuttlefish and sea bream, crab salad, confit dentex fillet, and delicious sushi.

Climate

The 2020 vintage will be remembered as an historic year for Ca’ Viti, in all aspects. The mild climate throughout the year ensured the vine strength and health, from budding to harvest. The growing season was characterized by heavy autumn rains, followed by above average temperatures in winter and spring which encouraged an impressive vegetative and productive balance. Summer weather was moderately hot, with beneficial rains which in August replenished groundwater reserves and together with excellent temperature swings from daytime heat to nighttime coolness allowed the grape to gradually progress to ideal ripeness.

Tasting notes

Bright yellow wildflowers and dry straw warmed by the midsummer sun light up the glass, while clear straw yellow hues fade on the rim of a beautiful tutu. On the nose this wine shows aromas of great ripeness, characterized by notes of ripe yellow fruit and gorse bushes embellishing a Mediterranean scrub with medlar plants. On the palate, the impact is soft and gratifying, with a vein of acidity which gives the sip greater elegance and freshness. The finish is marked by a slight astringency and hints of orange peel, lemon, and cotton candy invites the next sip.

Food pairing

This wine is the ideal pairing with Italian fried vegetables or a creamy risotto with seafood, but also allows versatile combinations with scaloppini of white meat and chicken galantine.
